Gathering Sap the Old Way
Painting Description
The cross-bred team of horses stands patiently in the clearing near the sugar shack. The crew of workers gathering the sap from the maple trees includes a woman. Although the participation of women is common field work amongst the Old Order Amish, seldom do Mennonite women participate in outdoor work other than gardening. In the shanty a man collects wood from its storage area to place in the fire below the evaporator. The evaporator consists of specially constructed boiling pans that sit atop a fire pit. Much reducing is required to render the sap into the sticky liquid gold known as syrup.
